Texturization or gelation of oily phases is a process widely used in many industrial sectors, such as agrofood, cosmetics and pharmaceuticals and others. And demand for biosourced molecules is very strong, due to societal demand and increasingly stringent regulations. In this context, we recently discovered and patented a carbohydrate derivative capable, by self-assembly, of gelling a wide range of organic solvents and oil phases. One of the main challenges of this research will be to propose an eco-friendly chemical of a new family of carbohydrate-based organo-/oleo-gelators that can be scaled up to industrial level. Starting with a screening of a library of sugar derivatives, the multi-scale structuration and properties will be studied in collaboration with the Laboratoire Rhéologie et Procédés in Grenoble.


The person recruited will be tasked with identifying the most appropriate "green" chemistry for modifying sugars, synthesizing a library of molecules and testing their ability to gel fatty phases, and finally studying the multiscale structuration and rheological properties of the resulting gels.


Skills in organic chemistry with a preference for glycochemistry and knowledge of the physical chemistry of soft matter, ideally with experience of gels.

Contexte de travail

This project will be carried out within the "Self-assembly of Glycopolymers" team at CERMAV (UPR CNRS 5301) in Grenoble, under the direction of Dr. Sami HALILA, and within the team of Dr. Frédéric PIGNON at the Laboratoire Rhéologie et Procédés (LRP, UMR 5520), both members of the Institut Carnot Polynat (funding agency).
