The recruited researcher will be responsible for developing a multiparametric electrochemical analysis of the redox state of wines during their production process.
The recruited person will develop sensors and electrochemical methods to detect the antioxidant species present in grapes and musts, and generated by the wine-making process. Results will compared with those of classic oenological methods for analytical validation. The recruited person will train laboratory technicians and supervise university interns. He/She will write activity reports and make project monitoring presentations. Analytical campaigns will be often carried out on production sites.
PhD in electrochemistry; knowledge of spectroscopic methods and wine chemistry.
Manufacture and characterization of electrochemical microsensors.
Writing of reports, publications and presentation of projects.
Complete autonomy to lead the scientific and technical project.
Supervision of technical staff and students.
This Research and Development project will be carried out in collaboration between an academic laboratory, the CBMN at the University of Bordeaux, and an industrial partner, Biolaffort, a leader in oenological solutions and analyzes. The CBMN (Institute of Chemistry and Biology of Membranes and Nano-objects, UMR5248), and more particularly the molecular spectroscopy team within the "MultiScale Biophysics" pole, is internationally recognized for the development of innovative analytical approaches applied to living media, and more particularly for the coupling of electrochemical and spectroscopic techniques. The analytical electrochemistry activities are coordinated by Dr S. Arbault, who has a long experience in the electrochemistry of living organisms, and has been working for several years on the analytical chemistry of wines and food liquids. The company Biolaffort via its Excel oenology laboratory is interested in the implementation of new methodologies to better characterize the redox state changes in wines according to oenological practices. For a close and constant collaboration between the partners, the recruited person will work weekly on the two sites (laboratory, industrial) located in the Bordeaux conurbation.
