Missions

Presentation of the research context:
The post-doctorate is part of the ANR SalEtMieux research (ANR-19-CE21-0009 / Optimizing the use of discretionary salt) on the social uses of cooking and table salt in the domestic sphere. (2020-2024), PRC, CE21, Food and food systems, coordinated by Thierry Thomas-Danguin (INRA - CSGA, Dijon) and more precisely in WORK PACKAGE 1 carried out at CERTOP (CNRS, UMR 5044, Toulouse) under the scientific direction by Anne Dupuy, head of WP1 “Discretionary salt use”.

The objectives of the project are (WP1) to better characterize the salting practices at home and the use of discretionary salt during the preparation of meals or when using salt at the table in order to identify the levers to optimize these practices. ; (WP2) improve knowledge on discretionary salt-food interactions in the context of home salting practices in order to estimate the influence of discretionary salt on food properties and availability of discretionary salt for taste receptors; (WP3) identify the best conditions for discretionary salt to contribute to taste perception taking into account home salting practices and discretionary salt / food interactions with the aim of providing improved and operational options for the use of discretionary salt ; (WP4) explore positive communication strategies, taking into account the pleasure of eating and cooking, to provide stakeholders with understandable, affordable, achievable and practical discretionary salt best practice recommendations.

The main missions within the framework of the post-doctorate within WP1:
- Update of the literature review of research-related work

- Participation in the scientific animation of this research

Activities

The main missions within the framework of the post-doctorate within WP1:
- Update the literature review of work relating to research (including work in English and research outside the social sciences), and ensure bibliographic monitoring throughout the project,


- Participate in the scientific animation of this research by:
i) data collection (appropriation and consolidation of research hypotheses with comparison with the results of the INCA 3 survey; selection of households in accordance with the variables of interest identified; development of a data management plan and implementation of RGPD and research ethics compliance; in situ ethnographies with several households and observations in an experimental context within the framework of the OVALIE platform),
ii) by participating in the various stages of this research, from setting up the tools to writing the research report and promoting it and by participating in project meetings with the teams involved and in writing reports and discussion media,
iii) by the organization of scientific events (in particular around OVALIE) and the occasional contribution to actions to promote research among the student public of ISTHIA,
iv) by using collaborative tools put in place to allow team and project members to work with the same sources and share results.

Skills

The candidate must hold a doctorate in social sciences (sociology, anthropology, political science) on the date of taking office, preferably on the themes of food, health, nutritional policies and have a good command of qualitative methodologies and English. This position requires autonomy in carrying out the survey with an ability to work in a team and as part of an interdisciplinary project, as well as good writing skills.

LOCATION :
CERTOP - CNRS UMR 5044 and OVALIE experimental restaurant platform, Jean Jaurès University, Toulouse.

The post-doctoral fellow will be attached to CERTOP, CNRS Joint Research Unit (5044), directed by Marie-Gabrielle Suraud. This research laboratory, within the research center of Toulouse Jean Jaurès University, is a unit in which ISTHIA teacher-researchers continue their research activities. CERTOP is organized into 4 axes including SANTAL (Health-Food) directed by Jean-Pierre Poulain and Anne Mayère. The salary is modeled on the CNRS salary grids. Travel costs will be covered by the project.
The person recruited will preferably reside in the region during the course of the contract. Desired experience <2 years after the doctorate.

Constraints and risks

Compliance with health security measures related to the COVID-19 epidemic as part of the collection protocol involving the human person (physical distancing or wearing a mask; use of hydroalcoholic gel; verification of the absence of symptoms, etc.). Approach articulated in the research protocol which will be submitted for the opinion of the Research Ethics Committee.
